I piatti proposti devono essere gustosi senza appesantire.  <\/li><li><strong>Prezzo adeguato<\/strong> &#8211; Adeguato non significa basso: il prezzo del menu deve rispecchiare tanti fattori, dalla zona in cui ci si trova a quanto viene proposto ai clienti. L&#8217;ideale \u00e8 valutare le attivit\u00e0 sprovviste di mensa in un raggio di circa 500 metri dal locale, cos\u00ec da individuare il target di clienti e la loro capacit\u00e0 di spesa media. <\/li><li><strong>Servizio veloce<\/strong> &#8211; Ultimo ma non per importanza: il personale di sala deve essere veloce a prendere l&#8217;ordine, tanto quanto chi \u00e8 in cucina nel produrlo. La cassa per il conto? Velocissima.<\/li><\/ol>\n\n\n\n<p>Tutti questi punti hanno come conseguenza delle variazioni nella gestione della sala e della preparazione dei piatti. <\/p>\n\n\n\n<p>Il <strong>food styling<\/strong> dev&#8217;essere <strong>pi\u00f9 minimale<\/strong>, senza troppi fronzoli che farebbero perdere tempo alla cucina.
